Gluten Free Delicious!

It’s hard to believe anything “gluten-free” would be easy to tackle in your kitchen, let alone bread!  Well this is fantastically easy, takes just a handful of minutes to make and is over-the-top delicious.

Recipe: Gluten Free Flatbread with herbs

1 ¼ cup almond meal/flour (such as Bob’s Red Mill® brand)

½ teaspoon baking powder

½ cup whole almonds*, ground fine in a food processor (to yield about ¼ cup)

1 egg

2 tablespoons TSTE® organic extra-virgin olive oil, plus additional to garnish

½ cup boiling water

Sea salt and fresh ground pepper, to season

Fresh chopped herbs, to finish (use herbs to complement your meal)

*ground Pistachios are a nice flavor alternative to almonds.

Preparation

Preheat oven to 375º F.  Generously spray a baking sheet with a non-stick spray.

Combine the almond meal and crushed almonds, baking powder, egg and olive oil and mix to combine.  Add the boiling water and mix until the ingredients are moist and tacky.  Spoon onto baking sheet and shape.  Bake for about 12 minutes until the dough is set and firm to the touch.  Cool on sheet for about 1 minute then immediate and carefully slide a flat spatula underneath the flatbread to release from the sheet.  (Note: do not use non-stick parchment paper; the moisture from the batter will absorb into the paper and your flatbread will not release!)

Heat a grill (or grill pan) and grill flatbread for about 2 to 4 minutes per side, until golden brown and firm.  Drizzle with organic extra-virgin olive oil; season with salt and pepper, and sprinkle with fresh herbs.  Serve warm alone or with your favorite gluten-free dips, spreads, meats or cheeses.
