YORK, Pa - It's spring time, which means the produce selections in your local grocery store is starting to look much brighter. Lancaster Oregon Dairy Manager Jim Hensel stopped by the FOX43 Kitchen to talk about this year's produce outlook. Hensel says conditions may make things a bit late.
And just in time for Memorial Day cookouts, Hensel shared how to prepare bacon-wrapped asparagus. Here's the recipe.
1 1/4Ib asparagus
Tips- 4-5" long
Extra Virgin Olive Oil
Salt & pepper
4 slices of center cut bacon, pancetta or prosciutto
fresh chopped chives or scallion for garnish
*bundles can be easily prepared on an outdoor grill or in an oven.
1. Preheat oven to 400 degree or pre-heat outdoor grill
2. Lightly coat asparagus in olive oil and season with salt and pepper.
3. Divide total number of asparagus spears by 4. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together.
To grill: place bundles on the hot grill and cover. Cook for 10-12 minutes over indirect heat until the bacon crisp and the asparagus are tender.
For oven: place bundles on a slotted broiler pan. Bake for 12 minutes or until the bacon is crisp and the asparagus is tender.
Sprinkle with chopped chives or scallions and serve.
