Executive chef Allan Rupert from Hollywood Casino at Penn National Race Course in Grantville, Dauphin County stopped by the Fox43 Kitchen today to show us how to cook salmon on a cedar plank. After seasoning the salmon to your taste, the salmon is cooked for about 20 minutes at 425 degrees in the oven as it roasts on top of the plank. And getting a plank to cook your salmon on isn't difficult. Chef Rupert suggests going to any hardware store and picking up an untreated 8 inch wide cedar plank to use in your oven or on the grill.

The cedar plank salmon is one of five entrees that will be served at the Mountain View Terrace dining room on Belmont Day, coming up on June 6th. Immediately after the Belmont Stakes finishes, Penn National will have live racing at the track.

Hollywood Casino is also gearing up for the Troegs Brewery Trackside event on May 30th. There will be several featured races that evening and the last one will be for the Troegs Trophy. The event will feature many different menu items as well, including sliders, chicken wings, homemade pretzels, chips and Troegs Java Head infused ice cream.
