Rosemary roasted Cornish game Hen served alongside an apple plum chutney, fresh oyster stuffing, and broccoli rabe

Apple plum chutney:

2 Fiji apples coarsely chopped

3 oz brown sugar

1 whole orange - zested And juiced

1 whole lemon - seated And juiced

1 cup apple cider

2 tbsp fresh ginger

1 cinnamon stick

1 star anise

1/4 tsp freshly grated nutmeg

Cornish hen:

Kosher salt

Black pepper

Fresh rosemary

Garlic

White wine

Extra Virgin Olive Oil

Butter

Carrots

Onions

Celery

Oyster Stuffing:

Dried Italian bread

Bacon

Extra Virgin Olive Oil

Fresh thyme

Fresh sage
