3 oz brown sugar
1 whole orange - zested And juiced
1 whole lemon - seated And juiced
1 cup apple cider
2 tbsp fresh ginger
1 cinnamon stick
1 star anise
1/4 tsp freshly grated nutmeg
Cornish hen:
Kosher salt
Black pepper
Fresh rosemary
Garlic
White wine
