Kitchen S’mores
Who doesn’t love S’mores? But, who has the time to get the fire going whenever you want that sweet decadent treat? I love this way to assemble S’more’s right in your kitchen. Perfect for when the kids come home after the big game or for a great weekend treat!
Recipe: Chocolate Caramel S’mores
Makes about 8
Ingredients
1 bag semisweet chocolate morsels
Flaked sea salt (I recommend Cyprus Flake Sea Salt from The Spice & Tea Exchange®)
16 (more or less) graham crackers or your favorite cookie, such as nilla wafers, chocolate wafers
Caramel sauce, refrigerated
Marshmallow fluff
Preparation
Place the chocolate in a glass bowl and melt in microwave or over a pot of simmering water (make sure you don’t burn the chocolate). While the chocolate is melting, set a cooling rack in a rimmed sheet pan and set out your cookies in groups of two (remember, two cookies make 1 s’more).
When the chocolate is melted, use a spoon and pour/spread the chocolate over the top of each cookie. Sprinkle with a bit of flaked sea salt. Set aside to cool for at least 3 to 4 hours. (Note: you can cool in the refrigerator until hard, about 1 hour, but the chocolate will get a whitish bloom to it. No need to worry, just before serving dip a pastry brush into some hot water and carefully go over the top of each cookie to bring back the shine!)
When the chocolate has hardened, turn the cookies over. Spread a layer of marshmallow on one cookie and a layer of caramel on the other. Put the cookie sandwich together with the marshmallow and caramel facing each other and gently squeeze.
Place out on a chilled platter with plenty of napkins and serve immediately!
