GOAT CHEESE CRAB & SHRIMP CROSTINI from Char's at Tracy's Mansion
1 French baguette
8 oz lump crab meat
½ # shrimp 21-25 peeled & de-veined
2 head – bulb garlic (peeled, whole cloves)
1/3 C olive oil + 3 Tbsp
1 small red or orange peppers = or 1 jar roasted peppers
1 Tbsp red pepper flakes
8 oz goat cheese
Rub peppers with 1 Tbsp oil and roast in 425 degree oven for 35 min; remove skin and julienne.
Cook garlic skin removed in 1/3 C olive oil on stove top til soft & brown; puree in food processor.
Sautee shrimp in 2 Tbsp olive oil til just done about 5 min.
Cut baguette in ½ inch slices and rub with roasted garlic puree; top all with goat cheese;
Do half baguette with crab and other half with shrimp;
Top all with julienne pepper & red pepper flakes.
Line on a sheet tray and cook at 425 degrees for about 4-7 mins.
