If you're planning a spring party, you won't want to miss this crab dip from Cork Factory Hotel.
1 CAN SPECIAL LUMP CRAB MEAT
1 LB CREAM CHEESE
1 CUP HALF & HALF
1/2 FRESH SQUEEZED LEMON
1 & 1/2 TBSP HORSERADISH
1 MEDIUM SHALLOT FINELY DICED
3 CLOVE GARLIC, FINELY CHOPPED
Take your scallions and finely bias cut the green ends for garnish; fine chop the remainder. Sweat the diced shallots, garlic, and bottoms of the scallions (do not brown.)
Add horseradish, squeezed lemon juice, cream cheese, and half & half.
Mix well until all is blended and cream cheese is melted out, then fold in crab meat and serve.
Can be made ahead of time and reheated.
Garnish with bread crumbs and the greens of the scallions.
