Shrimp Asparagus Quinoa Stir Fry

Looking for a meal that is not only quick and simple, but healthy too? FOX43's Andrea Michaels is in the kitchen with a recipe that does just that!

 

Recipe:

1 cup uncooked quinoa (rinsed)

1 bunch fresh asparagus (cut into smaller pieces)

1 lb raw shrimp (peeled and deveined)

1 small chunk of fresh ginger (about an inch in length)

1.5 T stir fry oil

1.5 T sesame oil

salt and pepper

sesame seeds for garnish (optional)

 

Directions:

Take asparagus pieces and partially cook them for about 5 to 7 minutes in boiling water (you can skip this step if you like asparagus more raw or if you are using frozen asparagus). Remove and drain. Set aside. Cook quinoa according to package directions (about 12 to 15 minutes). The quinoa will be soft and fluffy when done and all of the water will have been absorbed.

While the quinoa cooks, heat a pan with the sesame oil and stir fry oil. When oil is heated, add the ginger chunk. Allow it to cook for about 4 minutes, turning it frequently so it doesn't burn. Remove and discard before it begins to burn. Salt and pepper the shrimp and add them to the pan. Cook for about 3 to 6 minutes, depending on the size of your shrimp, until cooked thoroughly. Remove from pan and set aside, leaving any remaining oils and juices in the pan. Toss asparagus into the pan and cook  to taste. Add the quinoa into the pan, and mix. Toss shrimp in, and mix if desired. Divide into 4 portions, or two large portions, and serve. Sprinkle some sesame seeds on top if desired. Enjoy!
