Mojito infused food and drinks

Olivia’s Authentic Mediterranean Cuisine in Gettysburg stopped by the Fox43 kitchen today to cook up some different mojito infused dishes. From steak to seafood, Harry and Adrienne Tassou showed how to put together some unique summer dishes.

 

Sizzlin' Pineapple Mojito Steak & Shrimp ingredients:

Jumbo shrimp, peeled

Peppers, julienned

Spanish white onions, julienned

Fresh garlic cloves (about 3)

Fresh mint

Fresh lime juice

 

Pineapple Mojito Salsa ingredients:

Red onion, diced

Scallions, diced

Cucumber, diced

Mint, chopped

Pineapple, diced

Serve with fried plantains, sticky jasmine rice & black beans

 

Coconut Mojito Ceviche ingredients:

Sugar

Sea salt

Blue Chair Bay coconut rum

Lime juice

Jalapeños

Peppers

Garlic, chopped

Red onion

Mint

Cucumber

Red pepper

Cilantro

Avocado

Yellow tomato

Lime zest

Thai coconut juice

Crispy plantains & tortillas for garnish

Shredded coconut

Crispy tortillas

Jumbo shrimp

Bay scallops

Mussels

Clams

 

Mango Mojito Fish Taco ingredients:

White corn tortillas stuffed with blackened tilapia, avocados, grilled corn, tomatoes, onions, cilantro, shredded red cabbage, bok Choy, pineapple, and fresh mango.

Drizzled with chipotle cremma.

Bibb lettuce may be substituted for tortillas.

Serve with back beans & sticky jasmine rice.
