YORK, Pa.-- Thanksgiving is just a mere days away!

While many are making preparations for their holiday meal, we are doing the same in the FOX43 Kitchen.

Today, Olivia's will be here beginning with FOX43 Morning News at 8 a.m., and will cook all day while making appearances in our 4, 5 and 10 p.m. newscasts.

This morning, Chef Harry Tassou will be preparing cranberry bread pudding w/ a dark rum & caramel latte sauce while mixologist Adrienne Tassou prepares blueberry crisp coffee.

The recipes for the cranberry bread putting and dark rum & caramel latte sauce can be found below:

Cranberry bread pudding w a dark rum & caramel latte sauce

Ingredients:

5 cups cubed or sliced bread (crusty bread such as French or Italianworks best)

4 cups heavy cream

6 eggs (large)

1 cup brown sugar

1 tbsp vanilla extract

1/2 tsp cinnamon

Pinch ground star anise

1 1/2 cups cranberries

1 1/2 tsp lemon zest

1 pinch kosher salt

1 cup raisins (soaked in dark rum such as Kraken)

Preparation:

Whisk cream, sugar, cinnamon, eggs, vanilla, cranberries, drunken raisins, lemon zest, & salt in a large bowl.  Soak bread into mix.  Place in a baking dish.  Add remaining mix.  Cover w/ plastic wrap first, then foil (w/ shiny side facing down).  Bake @ 350*F for approximately 15-20 mins.  Remove wrappings & place back in oven for an additional 5 minutes until firm.

Dark rum & caramel latte sauce

Ingredients:

1 cup brown sugar

1/2 cup heavy cream

1/4 cup butter

1 tbsp vanilla

1 pinch of salt

Double shot of espresso

1 cup raisins soaked in 2 oz of dark rum

Preparation:

Mix brown sugar, cream, butter, salt in a sauce pan.  Cook on low-med heat, constantly whisking for 4-6minutes or until it thickens.  Add vanilla, espresso, & drunken raisins.  Cook for approx 1-2 more minutes.  Turn off heat, let cool.  Pour over bread pudding.  Enjoy!
