Repurpose holiday leftovers into delicious bread pudding | Family First

YORK, Pa. — Many people are setting their tables for holiday meals to bring the family together.

If you signed up to bring a dish to dinner but forgot to do your grocery shopping, you might just be in luck with what's already in your fridge.

FOX43 Morning News anchor Sean Streicher and Harry and Yanni Tassou from Olivia's demonstrate how to whip up a holiday bread pudding in no time.

Bread pudding

Ingredients

1 bread loaf - thick slices

12 eggs

24 ounces, cream

2 tablespoons, vanilla

6 tablespoons, sugar

2 tablespoons, cinnamon

1 teaspoon, allspice

1 cup, crushed pecans

Directions

Layer the bread in a casserole dish. Mix the eggs and cream together. Add the pecans, cinnamon, allspice, sugar and vanilla. Cover and bake in an oven preheated to 350 degrees Fahrenheit for approximately 20 minutes. Uncover the dish and bake for an additional 15 minutes or until slightly firm in the center (but not dry). Remove it from the oven and let it rest for about 15 minutes. Drizzle the pudding with the coffee icing and garnish with craisins.

Coffee icing

Ingredients

1/2 cup, cold coffee

1/2 cup, cream

2 cups, powdered sugar

2 tablespoons, vanilla

4 tablespoons, butter, melted

Directions

Sift the powdered sugar into a mixing bowl. Add the coffee and butter, whisking constantly. Slowly add the cream until the icing becomes your desired thickness. Drizzle it over the bread pudding.
