Tasting handmade pierogis from Inna's Pierogi Shop

Owner Inna Kondramashin learned the art of pierogi-making from her grandmother. She now passes the tradition onto soon-to-be owners Emily Gonzalez and Michael Ortiz.

LANCASTER, Pa. — Inna Kondramashin learned the art of pierogi-making from the best—Grandma.

The shop owner has been making the treats for as long as she can remember.

"As little kids, we didn't help too much—we liked to just, you know, steal some dough," Kondramashin laughed.

But then she grew up, and suddenly a cherished childhood memory became a booming business—and a family tradition.

"Now that I have my own kids, I do the same thing," she said. "We have a little assembly line, and we make it together."

She started Inna's Pierogi Shop about eight years ago. It will soon be changing hands, but the pierogis are still straight from Grandma's kitchen.

"I have been feeling called to move on with life, but I really wanted to find the next best people who would be able to take this business to the next level," Kondramashin said. "And so, it so happened that Emily came into our life with Michael, and so you will be seeing their faces a lot more."

Kondramashin says she will still help out as needed, but Emily Gonzalez and Michael Ortiz will transition into full-time ownership of the business over the next few weeks.

They've been busy learning how to make the pierogis—a machine pinches them closed, but every other aspect of the delicacies is handmade.

"We are growing, expanding, and we have a lot of news coming up," Gonzales said.

In the meantime, Inna's Pierogi Shop will still serve the same quality food that it's known for. Ingredients are sourced locally, and the shop makes a number of fun seasonal flavors.

Inna's offers frozen pierogis to take home and cook, or guests can enjoy them hot and fresh in the store.

Hungry shoppers can find Inna's pierogis at Compass Mill Complex, located at 811 Rothsville Road in Lititz, and Lancaster Central Market, located at 23 N. Market St. in Lancaster.
