YORK, Pa. — St. Patrick's Day is almost here, and Olivia's already found the pot at the end of the rainbow--except it's filled with Irish Cream of Cabbage Soup instead of gold.
The Emerald Isle fare is complemented with an Irish Grilled Cheese served on thick-cut soda bread lathered in lamb butter and layered with Irish cheddar cheese and whiskey Drunken Onions.
A minty cocktail to finish off the meal will sham-"rock" your taste buds.
Meal
Cream of Cabbage Soup
Ingredients
2 pounds, fresh ground pork
3 pounds, fresh cabbage
1 cup, celery, chopped (mirepoix)
1 cup, leeks, chopped (mirepoix)
1 cup, carrots, chopped (mirepoix)
4 tablespoons, garlic butter
2 bay leaves
1 tablespoon, black pepper
1/2 teaspoon, white pepper
1/2 teaspoon, sea salt
1 gallon, chicken stock
1 quart, heavy cream
1/2 teaspoon, fresh rosemary, diced
1/2 teaspoon, fresh sage, diced
Slurry (mix together):
- 4 ounces, cornstarch
- 4 ounces, water
Directions
In a pot placed on high heat, sauté the mirepoix, veggies, sausage, rosemary, sage, salt, peppers and bay leaves until the sausage is cooked, approximately five to six minutes. Add the chicken stock and bring the pot to a boil. Add the slurry. Bring the soup to a boil, stirring constantly. Add the heavy cream, and bring it to a boil again.

Lucky Charms marshmallows, for garnish

Directions
Place ice in a glass. Add the vodka, Baileys, creme de menthe and cream. Shake the drink. Strain it into a martini glass. Top the cocktail with whipped cream, marshmallows and chocolate shavings.
