Meal: Blackened Pineapple Pork Chop
Blackening Rub for Pork Chop
Ingredients
1/2 cup, Dijon mustard
1 tablespoon, cayenne pepper
1 tablespoon, cumin
3 tablespoons, black pepper
1 tablespoon, celery salt
1 tablespoon, smoked paprika
1 tablespoon, granulated garlic
Directions
Mix all of the ingredients, then smother them on the pork chop.
Pineapple Chutney
Ingredients
2 cups, pineapple, chopped
3 tablespoons, cilantro, finely chopped
2 tablespoons, fire roasted red pepper, diced
2 limes, juiced
1/2 teaspoon, black pepper
1/2 teaspoon, celery salt
2 tablespoons, honey
2 tablespoons, chives, diced
1 teaspoon, jalapeño, diced
1 tablespoon, soy salt
Directions
Mix all of the ingredients together. Serve the chutney over the pork chop.
Cocktail
Winter White Chocolate Martini
Ingredients
Ciroc Coconut Vodka
White chocolate liqueur
Amaretto
Cream
Whipped cream
White chocolate shavings
Directions
Fill a glass with ice. Add the vodka, white chocolate liqueur, amaretto and cream. Shake it well. Strain the drink into the prepared glass. Top the cocktail with whipped cream, and garnish it with white chocolate shavings.
