YORK, Pa. — The holiday season may be chilly, but Olivia's is bringing some heat to your table.
Spicy Vodka Bucatini with grilled octopus and shrimp adds some spice to traditional holiday dishes. Served with roasted sweet potatoes, this meal will keep you warm inside and out.
Spicy Vodka Sauce
Ingredients
1/2 teaspoon, Old Bay
2 tablespoons, brown sugar
1 teaspoon, black pepper
1 teaspoon, fresh garlic, chopped
4 tablespoons, poblano peppers, roasted and chopped
1 tablespoon, jalapeño, diced
2 tablespoons, sweet roasted peppers, chopped
1/2 cup, fresh basil, chopped
1 cup, heavy cream
4 tablespoons, shallots, diced
2 tablespoons, garlic butter
4 tablespoons, extra virgin olive oil
2 cups, crushed tomatoes
2 cups, diced tomatoes
1 cup, chicken stock
3 ounces, vodka
5 tablespoons, fresh Italian parsley, chopped
Directions
Sauté the garlic and shallots with the extra virgin olive oil until translucent. Add the peppers; cook them for approximately three minutes. Deglaze the pan with the vodka. Add the tomatoes, garlic butter, chicken stock, basil, black pepper, old bay and brown sugar. Bring everything to a boil. Turn the heat to low. Add Asiago cheese, stirring constantly. Stir in the heavy cream and add the parsley, then cook for an additional five minutes.
