Olivia's is keeping it light and fresh with a Prosciutto Burrata Salad.
Fresh arugula greens and heirloom tomatoes are tossed in a basil vinaigrette, then topped with creamy burrata and prosciutto. The dish is best served with crispy bruschetta and garnished with Asiago cheese slivers.

Basil Vinaigrette
Ingredients
1 cup, extra virgin olive oil
1/2 cup, red wine vinegar
1/2 cup, fresh basil, coarsely chopped
Pinch, sea salt
1/4 teaspoon, black pepper
1/2 cup, fresh parsley
1 tablespoon, shallots, finely diced
1/2 teaspoon, fresh garlic, finely diced
Directions
Mix all of the ingredients together. Drizzle the vinaigrette over the salad.
