Ingredients
2 cups, carrots
2 cups, onions
2 cups, celery
Directions
Coarsely chop all of the ingredients and mix them together.
Chicken Pumpkin and Lentil Curry Soup
Ingredients
2 tablespoons, ginger, freshly grated
1 teaspoon, curry powder
1 tablespoon, garlic, freshly chopped
2 tablespoons, extra virgin olive oil
1 whole chicken (boiled with 1 1/2 gallons water, meat removed, stock saved)
3/4 gallon, chicken stock, fat skimmed off
2 pounds, lentils
15 ounces, Thai coconut milk
4 ounces, cream of coconut
12 ounces, pumpkin puree
3 cups, roasted pumpkin, chopped
1 teaspoon, black pepper
1/2 teaspoon, pepper flakes
2 cups, kale, chopped and washed
3 bay leaves
Directions
Cut the whole chicken into quarters. Add 1 teaspoon of sea salt. Cover the chicken with water. Boil the chicken until it is tender and falling off the bone. Remove all of the meat and bones. Set them aside to cool for 5-10 minutes. Discard all of the chicken skin and bones. Break up the meat. Skim the excess fat from the top of the stock, then set the stock aside. In a heavy-bottom pot, saute the mirepoix, garlic and extra virgin olive oil for approximately 3 minutes. Add the lentils, black pepper, bay leaves, curry powder and chicken stock. Bring the pot to a boil. Add the coconut milk, chicken, Coco Lopez, ginger, pumpkin puree, pepper flake, roasted pumpkin and kale. Bring everything to a boil. Serve the soup with homemade bread. Optional: garnish it with fresh cilantro.

Simple syrup
Fresh chopped apples topped with cinnamon and sugar
Directions
Fill a glass with ice. Add the vodka, wine, amaretto, simple syrup and apple cider. Shake the drink. Top the cocktail with chopped apples sprinkled with cinnamon sugar.
