Olivia's introduces light spring meals with healthy Chicken Quinoa Bowl

Olivia's is ready for spring with a light and healthy fire-grilled Chicken Quinoa Bowl. A Fairy Godmother cocktail to finish off the meal is magic in your mouth.

YORK, Pa. — Olivia's is ready for spring with a light and healthy fire-grilled Chicken Quinoa Bowl. 

The bowl is topped with toasty chickpeas, tzatziki, hummus, kasseri cheese, heirloom tomatoes, European cucumbers, red onion, golden raisins, garnished with fresh mint and served with grilled pita.

A Fairy Godmother cocktail to finish off the meal is magic in your mouth.

Meal

Marinated Chicken Tenderloins

Ingredients

3 pounds, chicken tenderloins, trimmed

1/2 cup, extra virgin olive oil

1 lemon, squeezed 

1 teaspoon, oregano 

1/2 teaspoon, sea salt

1 teaspoon, black pepper

1/2 teaspoon, fresh rosemary, diced 

1/2 cup, white wine

Directions

Mix all of the ingredients; add the chicken last. Place the container in the refrigerator to marinate for at least six - eight hours.  

Roasted Chickpeas

Ingredients

2 - 12-ounce cans, chickpeas, drained 

1/2 teaspoon, sea salt

1/2 teaspoon, black pepper

1/2 teaspoon, smoked paprika 

1/2 teaspoon, cumin 

1/4 cup, extra virgin olive oil

Directions

Place the chickpeas on a baking sheet. Drizzle extra virgin olive oil over the chickpeas. Add the spices, tossing to cover well. Bake the chickpeas in the oven—preheated to 400 degrees Fahrenheit—for approximately 15 minutes or until golden brown and crispy.

Tzatziki

Ingredients

12 ounces, Greek yogurt 

2 European cucumbers, peeled, shredded, strained, then squeezed (using cheesecloth) to removed excess water

1 teaspoon, fresh garlic, minced

1 teaspoon, sea salt

1/2 teaspoon, black pepper

1/2 cup, fresh dill, chopped 

1/2 cup, fresh parsley, chopped

1/4 cup, white vinegar 

1/2 cup, extra virgin olive oil

Directions

Mix all of the ingredients together.

Cocktail

Fairy Godmother

Ingredients

Absinthe

St. Germain Elderflower Liquor

Fresh lemon

Fresh lime

Muddled pineapple

Pineapple juice

Splash of lemon-lime soda

Directions

Fill a cup with ice. Add all of the ingredients except the soda. Shake the drink vigorously. Top the cocktail off with a splash of soda.
