Jamaican Marinade
Ingredients
1 teaspoon, Jamaican allspice
1/2 teaspoon, sea salt
1/2 teaspoon, black pepper
1/2 cup, scallions
1/2 teaspoon, nutmeg
2 limes, juiced
2 tablespoons, brown sugar
1 tablespoon, thyme, finely chopped
1/2 cup, poblanos, diced
1/2 cup, pineapple juice
Directions
Mix all of the ingredients together.
Chipotle Ranch Dressing
Ingredients
1 cup, mayo
1/2 cup, sour cream
1 tablespoon, fresh garlic
2 ounces, mango nectar
1/2 teaspoon, black pepper
1/2 teaspoon, sea salt
1 tablespoon, chipotle peppers, puréed
2 tablespoons, heavy cream
1 tablespoon, dill, finely chopped
2 tablespoons, parsley, finely chopped
Directions
Mix all of the ingredients together.
Jamaican Style Pineapple Shrimp Po’boy
Ingredients
1 pound, jumbo shrimp, steamed and grilled
1 cup, pineapple, diced and grilled
1/2 cup, Jamaican marinade (instructions below)
2 tablespoons, fire-roasted red peppers, chopped
2 cups, creamy coleslaw
2 cups, mixed greens
2 cups, heirloom berry tomatoes, cut in half
1 cup, chipotle ranch dressing
4 po’boy rolls
Directions
Warm the rolls in an oven set at 350 degrees Fahrenheit. Cut them in half. Layer the chipotle ranch dressing, greens and tomatoes on one half. Add the shrimp and pineapples. Top the sandwiches with fresh creamy coleslaw. Serve the po'boys along with grilled corn on the cob.

Italicus Bergamot Orange Liqueur
1 whole orange, fresh-squeezed
Orange soda
Directions
Fill a glass with ice. Add the vodka, orange liqueur and fresh-squeezed orange. Top off the cocktail with orange soda.
