YORK, Pa. — Summer is coming to an end, but Olivia's isn't letting it go without squeezing out the last of the fresh flavors.
Mushroom and Chicken Quesadillas are served with greens tossed in a Honey Lime Dressing and fresh Guacamole.
A Royal Empress Lemonade will have you sipping like the aristocracy. The rosemary sprig helps slowly transition to an autumn palate.
Guacamole
Ingredients
3 avocados, fork-smashed
2 limes, juiced
2 tablespoons, cilantro, finely chopped
Pinch, sea salt
Pinch, black pepper
2 tablespoons, Anaheim peppers, finely diced
3 tablespoons, red onion, diced
2 tablespoons, red bell peppers, diced
2 tablespoons, garlic, diced
2 tablespoons, avocado oil
Directions
Mix all of the ingredients together. Save one avocado pit and place it in the guacamole to help keep the green color a bit longer.
Honey Lime Dressing
Ingredients
1/2 cup, avocado oil
2 limes, juiced
1 teaspoon, garlic, finely diced
Pinch, sea salt
Pinch, black pepper
1 cup, honey
Directions
Whisk all of the ingredients together. Drizzle the dressing over the fresh greens/salad.

Royal Empress Lemonade
Ingredients
Empress gin
Fresh-squeezed lemon
Monin lavender syrup
Simple syrup
Lemonade
Rosemary sprig
Fresh blackberries
Directions
Fill a glass with ice and squeeze in half of a fresh lemon. Add the simple syrup, lavender syrup, gin and lemonade. Shake the drink. Garnish the cocktail with fresh blackberries speared with the rosemary sprig.
