Olivia's shares recipes for Slow Smoked Pork Chops served with Baked Sweet Potatoes and a Poached Apple.

Meal

Sweet Butter Mix

Ingredients

Pinch, allspice 

2 ounces, brown sugar

Pinch, ground cinnamon 

3 tablespoons, walnuts, crushed 

2 tablespoons, maple syrup 

Baked Sweet Potato

Ingredients

2 each, sweet potatoes, washed

4 tablespoons, sweet butter

Directions

Mix all of the sweet butter ingredients together, then set it aside. Bake the sweet potatoes in an oven preheated to 375 degrees Fahrenheit for approximately 30 minutes, or until fork-tender. Pat the sides, pushing towards the center. Cut a slit along the top of each potato. Pop them open and place a dollop of sweet butter in the middle.

Poached Apple

Ingredients

2 each, Honeycrisp apples

4 tablespoons, butter

2 tablespoons, brown sugar

Pinch, allspice

Pinch, cinnamon 

1 cup, apple cider

Directions

Peel the apples, starting from the top and working your way down to about halfway. Core them at the seeds center. Place the prepared apples in a pan. Add the apple juice to the pan, then cover it with foil. Bake the apples at 375 degrees Fahrenheit for approximately 20 minutes, or until fork-tender.  

Cranberry Chutney

Ingredients

1 cup, craisins 

1 orange, zested, juiced

1 cinnamon stick

3 whole cloves

1 tablespoon, dried hibiscus 

5 tablespoons, brown sugar 

1 cup, apple cider 

1/2 cup, cranberry juice 

Directions

Bring all of the Cranberry Chutney ingredients to a boil. Simmer the pot for approximately 5 minutes.  

Chargrill the pork chop. 

Add one scoop of imported Greek cheese to the top of each Poached Apple. Drizzle a tablespoon of the Cranberry Chutney on top. Garnish the apples with toasted walnuts. Garnish the Baked Sweet Potato with the Sweet Butter. Drizzle 1 tablespoon of Cranberry Chutney on top of the pork chop.

Buttershots Schnapps

Fanta Orange Soda

Sweetened condensed milk 

Directions

Fill a glass with ice. Add the Captain Morgan, Buttershots and condensed milk. Shake the drink. Top the cocktail with Orange Soda.
