YORK, Pa. — When it's just too hot out to fathom a full meal, nibbling on some snacks may seem much more appealing.

Olivia's Greek Appetizer Board is the perfect light refreshment for a sweltering summer day. It features Melitzanosalata, Kasseri-Stuffed Grape Leaves and Creté Feta Dip, all served alongside pita bread.

An icy Mango Dragon Lemonade cocktail also helps keep you cool.

Meal

Melitzanosalata

Ingredients

2 cups, eggplant, roasted and diced

1 tablespoon, dill, finely chopped

1 tablespoon, scallions, diced

3 tablespoons, extra virgin olive oil

2 tablespoons, parsley, chopped

1/2 lemon, juiced 

1 tablespoon, red onion

1 tablespoon, fresh garlic, minced 

Pinch, sea salt

Pinch, black pepper

Directions

Using a fork, poke holes in the eggplant. Place it in the oven, preheated to 400 degrees Fahrenheit. Roast the eggplant for approximately 25-35 minutes, or until the skin starts to char and the inside becomes tender. Remove the eggplant from the oven and set it aside to cool for approximately 10 minutes. Cut it in half. Scoop out the flesh and place it in a bowl. Add the extra virgin olive oil, fresh garlic, sea salt, pepper, lemon, dill, red onion and parsley. Mix it well.

Kasseri-Stuffed Grape Leaves

Ingredients

1 pound, kasseri cheese, cut into eight 2-ounce squares

8 grape leaves

4 ounces, balsamic vinaigrette 

Directions

Open the grape leaf. Place the kasseri cheese in the center and wrap it. Place the leaf on a char grill for approximately four minutes. Flip the grape leaf, then grill it for another four minutes. Set it on a serving platter. Drizzle the cheese-stuffed leaf with balsamic vinaigrette dressing.

Creté Feta Dip

Ingredients

1 pound, feta cheese

1 tablespoon, banana pepper, minced

2 tablespoons, heirloom tomatoes, diced 

2 tablespoons, extra virgin olive oil

1 tablespoon, parsley, diced 

Directions

Mix all of the ingredients together. Spoon the mix into ramekin dishes. Bake the dip at 400 degrees Fahrenheit, until the feta starts to melt and the top lightly browns.

Ingredients

Bacardi Dragonberry Rum

Deep Eddys Lemon Vodka

Mango nectar 

Lemonade

Fresh lemon wedges

Directions

Fill a glass with ice. Add all of the ingredients. Shake the cocktail and serve it.
