Tasting Olivia's seasonal Lobster Kaseri

YORK, Pa. — A recipe for a seasonal lobster dish from Olivia's proves that seafood doesn't have to only be for summer.

Meal

Buttery Lemon Dill Sauce

Ingredients

2 cups, poached lobster tail meat, chopped

  • Poach in 1 cup water, 1 lemon, 1 cup white wine

2 cups, chicken stock

1 cup, lemon, juiced

Pinch, sea salt

Pinch, black pepper

2 tablespoons, fresh dill

5 tablespoons, unsalted butter 

2 tablespoons, flour

4 tablespoons, shallots, diced 

1 teaspoon, fresh garlic, diced 

2 tablespoons, extra virgin olive oil

1/2 cup, white wine

Fresh parsley, chopped

Directions

Lightly poach the lobster tails; don’t overcook. Remove the lobster meat. Dust it in flour, then remove the excess flour. Set the tails aside. Sauté the extra virgin olive oil and shallots with garlic. Deglaze the pan with 1/2 cup wine. Add the chicken stock. Bring the pan to a boil and reduce by half. Add the lemon, salt, pepper and dill. Cook everything for approximately 1 minute. Add the flour-drenched lobster meat and butter. As soon as the mixture starts to thicken, turn off the heat.

Baked Rice Pilaf and Kasseri

Ingredients

2 cups, Uncle Ben’s rice

4 cups, chicken stock

1 cup, shallots, diced 

1/2 cup, carrots, diced 

2 cups, Kasseri cheese, cubed 

1 cup, peas

1/2 cup, dill, chopped

1 teaspoon, black pepper 

1 tablespoon, fire roasted red pepper, diced

1/2 cup, unsalted butter, cubed 

1/2 cup, fresh parsley

Directions

Mix all of the ingredients together. Place them into a casserole dish. Cover the top with plastic wrap and foil. Bake at 400 degrees Fahrenheit for approximately 25 minutes. Remove the dish from the oven, remove the cover, stir, then add the Kasseri cheese. Re-cover the pan and place it back in the oven for approximately 20 more minutes. Remove the dish from the oven. Carefully remove the cover, avoiding steam burn. Add the lobster and sauce and serve with asparagus.

Ingredients

Jameson Cold Brew Whiskey 

Cold brew coffee 

Kreider’s Espresso Caramel Swirl ice cream

Whipped cream ghoul garnish 

Directions

Place a few ice cubes in a martini glass. Add the Jameson and cold brew coffee. Add one scoop of ice cream, then garnish with a whipped cream ghoul.
