How to build your own smoky pepper BBQ sauce:
24oz ketchup
3 oz chipotle peppers (puréed)
1 oz mustard
1 tsp smoked paprika
1 tsp liquid smoke
3 oz baklava (simple) syrup
Jamaican rub for pork:
2 tbsp freshly ground nutmeg
1 tbsp allspice (Jamaican if possible)
2 tbsp coriander seeds
2 tbsp cinnamon
2 tbsp fresh rosemary
1 tbsp salt
2 tbsp chipotle peppers (puréed)
24 oz Olivias ginger sauce
Prepare to make Mouth watering BBQ Pork Loin!
Place 2 lbs of boneless pork loin in a large container. Add 10oz if Olivias specialty ginger sauce. Rotate the meat a few times to coat evenly. Add all of the above dry rub ingredients. Let sit and marinate for approx 10-15 minutes. Place your char-grill on high heat. Place meat directly on grill and rotate every few minutes to allow the meat to char on all sides. Place pork in your roasting pan, cover w Saran Wrap, then foil (shiny side facing down). Roast at 300*F until the internal temperature of the meat is 160*F. Remove from oven. Uncover. Slice & top with the smoky pepper BBQ sauce you have prepared while your pork was in the oven. Enjoy!!
